I cannot believe I found my first write up (Nov 14, 2014) on facebook approx. 10 years ago. I called it my ''crunchy scrambled eggs'' After I ate my meal, I cried. Not because it was crunchy, but because I managed to furniture walk slowly to the kitchen. A stranger in my own house, that's how I felt. I was learning to walk again from my left side paralysis. I told myself, if there is furniture I would lean against it, and kitchen counters I can hold onto.
For those who remember, my breakfast consisted of a bottle of chocolate Ensure, a bowl of cashews and a hard boiled egg.
I was worried. My appetite had been suprisingly low (and that is not me), it had been 5 months since I came home from the hospital and every dish from Filipino to Greek was a no go. I had the strangest cravings for steamed spinach and lemons.
That day. I wanted to make scrambled eggs and my conversation with my fellow stroke survivor Claude Brickey.
''be careful with the knife and tie your left hand close to you. Be careful and remember, easy does it, safety first.''

I have attached the original write up to remember, patience is the key. Be KIND to yourself. We don't know where we will be tomorrow let alone 10 years... But look at the dishes I've learned to cook just with my right hand ...it is an amazing thing is it not?
